Seven Angels No.6 St Jegudiel

Seven Angels, is a series of single malt whiskies released one per year, in limited editions from Spirit of Hven. Every bottling is unique and with a distinctive scent and taste. This is number six, St Jegudiel, a fully matured single malt whisky with a bold, yet velvet smooth scent of spring flowers, winy aromas and spicy notes of coffee, chocolate and leather. A cherished spring evening with barbeque, freshly baked pie and lush greenery.

Etymologically, the whisky has got its name from the Archangel St Jegudiel. An angel whos attributes also have inspired the scent and taste character of this conscientious whisky.

St Jegudiel is an enticing and exciting blend of six whisky casks matured for 10-13 years. All but one of the casks were filled with unsmoked malt, giving a floral note with hints of leather and nuttiness around the edges. Two of the barrels were made of American Chinkapin oak, which contributes creaminess and the aroma of freshly baked pie. Four of the barrels were of French Allier oak, these contribute stringency, notes of earthiness and candied nuts. Two of the casks had previously held red wine, Cabernet Franc from northern Italy, providing a warm fruitiness and aromatic, herbal note. Two of the casks had previously held a sweet Italian dessert wine, providing a caramelized sweetness and an elegant citrus note. The casks was blended together and then slowly watered down to optimal bottling strength.

Scent and taste

Without water, the whiskey reach the nose full of spices and ripe berries, wrapped in vanilla and spring flowers. A lovely balance of nettle soup and mature champagne. A slight smokiness in the back reminds of a spring cookout, with barbecue and roasted almonds. Despite a high alcohol strength, the whiskey balances well in the mouth’s taste palette. First a tight acidity, then followed by an elegant woody sweetness and an exciting texture of oiliness and minerals. If a whiskey can exhibit notes of Umami, this is exactly how it expresses itself.
With water, to taste, the scent slides smoothly from spiciness to herbaceous. The alluring notes play on flambéed crepe Suzette with coffee and chocolate. Spring’s scents of hemlock and lilac are mixed with the farm aromas of reawakened mullein and budding flower beds. With water, the taste palette fine-tunes in the mouth. A lovely balance of sweetness and acidity, and a texture with slight oiliness but also an elegant roughness. Long aftertaste with soft notes of liquorice and sweetness. A whiskey that is just as good with or without water.
